  1. Heat the oil in a skillet. Toss in the onion, curry leaves, cashew pieces, urad dal, ginger, jalapeño and 1 teaspoon salt. Sauté until the onion is soft, but not brown.
  2. Toss in the chopped potato and keep stirring. If you're not using a non-stick pan you may need to add more oil.
  3. Add the dry farina, and stir to coat well in the oil. Keep it stirring so it does not burn.
  4. Add the water, frozen spinach and chopped tomatoes. Stir frequently, the uppuma will begin to thicken immediately. When it has thickened to your liking In about 5-10 minutes, remove it from heat.
  5. Season to taste with salt. Serve with lime.
