Here's a really simple custard that fills one double layer cake. It's pretty zingy!

  1. Mix together the sugar and cornstarch. Add the water, juice and food coloring and whisk well to get out any cornstarch lumps. Bring to a boil and add coconut. When the custard is thick and has turned clear, remove from heat and cool. Chill in the fridge before use.
  2. Spread into the middle of a double layer cake. You can check out the kitteekake tutorial if you need more instructions.
