About 6-8 servings

1/4 cup margarine
1/4 tablespoon frozen orange juice, thawed, undiluted
1/2 cup light brown sugar, packed
1 teaspoon salt
2 cans (1 pound each) yams, drained OR
2 pounds of fresh yams, peeled, chopped and steamed until tender
1 orange, sliced

  1. In a medium sized skillet, melt the margarine.
  2. Stir in the orange juice concentrate, brown sugar, and salt.
  3. Bring to a boil.
  4. Add the yams and orange slices, heat gently, turning the yams often.
  5. Place in serving dish and eat.
