What
You Need:
- 1 medium
block very fresh tofu
- 1 tablespoon
tahini
- 1 tablespoon
mild flavored miso, lightly colored rather than dark
- 1 lemon
half
- 1 small
garlic clove, pressed
- 4 kalamata
olives, pitted and finely chopped
What
You Do:
- Drain
the tofu and place it into a bowl.
- Add in
the tahini and miso and mash well with a fork.
- Squeeze
the lemon and add almost all of the juice, to taste.
- Add the
garlic and olives.
- Stir.
- Chill for flavors to blend, or eat-it-up without waiting.
You can
vary this however you please: no olives, fresh ground pepper, chopped cilantro,
sunflower seeds, grated carrots, fresh dill, etc.
